Crowd Pleaser

This asparagus tart is a guaranteed crowd-pleaser. The beauty lies in its simplicity. With just a few ingredients and minimal prep work, you can create an elegant and satisfying dish that's perfect for light lunches, quick dinners, or even a fancy appetizer.

Simple Ingredients

All you need to make this is a sheet of puff pastry (you can find it in the freezer aisle at your local grocery), a bunch of asparagus, cheese, lemon zest, and a few spices. It's really simple but so so good.

I make this asparagus tart for lunch a lot in the spring. It’s super simple and comes together quickly, so it’s an ideal recipe when you’re short on time.

What You'll Need

So, ditch the takeout menus and embrace the fresh flavors of spring! Here's what you'll need to whip up this yummy recipe:

  • A sheet of puff pastry: The magic (and time-saving!) ingredient. Find it pre-made and frozen in the freezer aisle at your local grocery store.
  • Asparagus: The star of the show! Look for firm, bright green spears with tight tips.
  • Cheese: Grated Gruyere, Gouda or Parmesan are classic choices, but feel free to experiment with whatever cheese you prefer (or have on hand)!
  • Lemon zest: A touch of citrus adds a delightful brightness that complements the asparagus beautifully.
  • Spices: Salt, pepper, and onion salt are all you need to bring out the natural flavors of the ingredients.

With these simple ingredients in hand, you're just a few steps away from enjoying this delightful dish!

Easiest Asparagus Tart

The best way to eat asparagus. Need I say more?

  • 1 sheet frozen puff pastry
  • 1 bunch asparagus
  • 4 oz cream cheese (or unflavored greek yogurt)
  • 1 cup shredded cheese (I usually do a combination of gouda and parmesan. Sometimes cheddar)
  • 1 tsp onion salt
  • salt and pepper (to taste)
  • zest of one lemon
  1. Thaw a sheet of puff pastry on a parchment lined baking sheet. Gently roll it out once thawed. It shouldn’t spread more than a half inch.
  2. Preheat oven to 400.
  3. Spread cream cheese or greek yogurt over the pastry, leaving about ½ inch bare around the edges. Sprinkle with onion salt and shredded cheese. Add Asparagus, alternating up and down (See photo). Add salt and pepper to taste. Finish by zesting one lemon over top.
  4. Bake in preheated oven for 20 minutes, or until the edges are golden brown and asparagus is fork tender.

You can top this with bacon crumbles or prosciutto if that's your thing

You can optionally brush the edges with egg wash or butter/oil for a deeper brown

If you prefer a crispier crust you can bake the puff pastry alone for 10 minutes before topping with the rest of the ingredients
