A simple everything bagel potato hash.

Diced onion, bite sized potatoes and melted Swiss cheese make up this simple but yummy hash. It comes together quickly in a single skillet, and can be served for breakfast, brunch, lunch or dinner.

This is a simplified version of my Everything But the Kitchen Sink Hash. Instead of throwing in all kinds of root veggies and squashes, this recipe is a simple potato hash. The Everything but the Bagel Seasoning really shines in this dish.

Everything Bagel Potato Hash Recipe

Ingredients

  • 1 tbsp Fat (olive oil, coconut oil, bacon grease, etc)
  • 1 Sweet Onion, diced
  • 2 Russet Potatoes, cubed
  • Swiss Cheese (as much as your heart desires)
  • Salt & Pepper, to taste
  • 1 tsp Onion Salt
  • Everything but the Bagel Seasoning

Instructions

  1. Start by warming a large pan over medium heat. While your pan is heating, dice a sweet onion.
  2. Add a drizzle of olive oil or a dollop of bacon grease or coconut oil. When the fat is hot ( a drop of water sizzles in the pan), add your onions and reduce heat to medium low.
  3. Cook onions, stirring occasionally, until they are soft and translucent and beginning to caramelize.
  4. Meanwhile, dice your potatoes. Add to the pan and stir.
  5. Sprinkle with salt, pepper, and onion salt.
  6. Cover the pan with a lid and reduce heat to low. Cook for about 10 to 15 minutes, until everything is fork tender.
  7. Turn off the heat and add your cheese to the pan. Cover with a lid again to allow the cheese to melt.
  8. Sprinkle with Everything but the Bagel Seasoning. Add salt and pepper, if desired. Stir, and serve warm!

Notes:

  • I love to use coconut oil to cook everything in, because I think it adds a lovely, subtly sweet flavor. If you're serving for breakfast, leftover bacon grease is also a great option.
  • To mix it up:
    • Top with green onions or chives
    • Try using a purple onion instead of a sweet onion, or a few shallots
    • I usually serve this with some sort of protein (bacon crumbled on top, sausage on the side, or ham leftovers chopped up and stirred in).
