I buy the tortellini Costco sells that comes as two 1.5 lb packages and store them in the freezer. That way, I always have tortellini to pull out and make this meal when I'm short on time. You can cook from frozen, and it hardly adds any time--maybe one extra minute boiling. This recipe uses one 1.5 lb package of tortelllini

- Top with shredded mozzarella. Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.
- Serve immediately. It's great served with fresh basil.
*If you choose to add onion or ground meat, heat a medium sized skillet over medium heat, add a drizzle of olive oil, and cook onions and ground meat until onions are soft and translucent and meat is fully browned. Then stir in a jar of pasta sauce and your freshly boiled tortellini.
