Celebrate Argentina playing in the World Cup by making this Argentina Flag Cake. It's surprisingly easy to make, and such a cute result! Perfect for your next watch party. Grab your favourite tub of vanilla (or see below for my recipe) and let’s make this delicious cake!

My Vanilla Ice Cream Recipe:

  • 1 1/2 cups heavy cream
  • 1 1/2 cups whole milk
  • 1 scant cup sugar
  • 2 egg yolks (optional)
  • Vanilla extract
  • Pinch of sea salt

Whisk everything together and churn in your ice cream maker according to manufacturer's directions. Enjoy!

Argentina Flag Ice Cream Cake

Lemon cookie crust layered with lemon curd, topped with vanilla ice cream.

Crust

  • 2 sleeves of lemon coookies (crushed)
  • 2 Tbsp butter
  • 2 Tbsp coconut oil

Cake

  • 1 jar of lemon curd (optional- if you don't like lemon definitely omit)
  • 3 quarts of vanilla ice cream
  • lemon slice

Make the Crust

  1. In a food processor, pulse cookies until you have fine crumbs. You can also beat with a rolling pin or measuring cup if you don’t have a food processor.
  2. Melt butter and coconut oil in a saucepan over medium heat. Pour over crumbs and pulse until crumbs are fully moistened and start to come together. (Or mix in a bowl). Press into a parchment lined 9 x 13 dish. Place in the freezer for 30 minutes.

Top with Lemon Curd and Ice Cream

  1. Set out 1 container of vanilla ice cream and allow it to soften a bit. Once softened, spread it evenly over the crust. Return to freezer to harden for 30 minutes.
  2. Once hardened, set out the second container of ice cream to soften. Meanwhile, spread a thin layer of lemon curd over the cake. Place two thirds of the ice cream in a medium sized bowl. Add a few drops of blue food coloring and mix. Continue adding a few drops at a time until you reach a sky blue.
  3. We will use two sheets of aluminum foil to make dividers for the flag's stripes. Fold each sheet in half, hot dog style. Fold in half again. Smooth on a flat surface. Gently score the lines of the flag's stripes in the first layer of ice cream and curd. Gently press your aluminum foil walls into these lines. (See above for image of cake with aluminum foil walls).
  4. Scoop your white vanilla ice cream into the middle section of the cake. Scoop your blue ice cream into the top and bottom sections. Smooth with an offset spatula. Gently remove your foil walls.
  5. Return to freezer and allow to freeze for at least 6 hours before serving. Before serving, slice a lemon and place the best slice in the middle of the white layer. You have your Argentine flag!

Notes:

  • I made the ice cream for this cake. In addition to being delicious, making your own ice cream for ice cream cake has the added benefit that it is already soft, so it is very easy to spread into layers for the cake. You can find my vanilla recipe in the blog post above.
  • I buy these lemon cookies thins from Trader Joe's.
  • I use Watkins natural food coloring. It works well for this recipe because the Argentine flag is a pastel blue. For deeper colors, natural liquid food dyes don't work well.
  • P.S. Don't use vanilla bean ice cream if you don't want black specs in your flag like mine has. XD
